This knife was supposed to hit store shelves in 2021, but the toughness of the steel and the size of the knife was such a powerful combination that it caused the implosion of our universe. So it was shelved and delayed. And delayed so long we thought we were hallucinating. But good things are worth waiting for. In size and design, this knife is very similar to the previous one, only with a thinner stainless steel blade. It is therefore much lighter and the balance is very nice indeed.
In summary, this is an impressive chef's knife. It may not be as nice as the expensive Japanese knives you never dare to use - but that's not its purpose. It's a proper tool that works very well as an all-purpose kitchen knife - slicing, dicing, slicing and dicing all sorts of edible things. Not people though, good people don't eat people. If you get one of these, you can just give all your kitchen-knife-like utensils to a friend who cooks lousier food.
N690 stainless steel blade
Unlike ordinary Terävä knives, this chef's knife is made from N690 stainless steel, which many consider to be the best common stainless steel for knife making. This material is very tough and corrosion-resistant, so it will stay sharp much longer than substandard knives made from over-the-counter material. The downside is that when it finally does need to be sharpened, it takes a little longer...
The blade thickness is 2.2-2.0mm, so the blade is much thinner than a regular Skrama knife and also thinner than the previous chef's knife we made. As anyone who has tried to make sushi with an axe knows, things are much easier to cut and portion with a thinner blade.
Handle
This kitchen tool has a similar handle to the Skrama 200, because it's a damn good handle. Nicely molded thermoplastic elastomer with a very good grip. Doesn't slip even when wet.
Care
Stainless steel and synthetic handle make the knife easy to care for. However, it should be remembered that no knife was made for washing in the dishwasher or sticking in the sink to grind against wet and dirty dishes. Hand washing all knives and drying them properly is still the best option.
Varusteleka Terävä
All Terävä knives and leather sheaths are made by Laurin Metalli, a family-owned company and Finland's leading knife maker from Kauhava with roots dating back to 1918. Boltaron sheaths are made by Savotta in Karstula, Finland. Savotta was founded in 1955 and is known for its simplistic and extremely robust Nordic designs. The Terävä blade is Finnish craftsmanship, pure and simple! And "Terävä" is simply Finnish for "sharp."
